what I eat lately

Hello, I want to tell you what I eat lately.  There are some new trends.

pesto

It’s been a long time, I’ve been a fiend for pesto.  Before, I believed that washing an oily blender was cruel and unusual punishment.  Now I know that Ming is ok washing it, so I make pesto almost every day.  This is my current recipe.

  • basil leaves and spinach leaves around half filling blender
  • 1/4 cup pecans
  • 1/4 cup olive oil
  • dashes of salt
  • large garlic clove

I never measure, so it always turns out slightly different.  Sometimes I add some tahini, miso, pine nuts, water…

I like to eat petso on tempeh, lately.  Yes, so good.  I saute half a package of tempeh, sliced, in olive oil till it’s golden brown.  Then I spread it on a plate and generously top with pesto.

Often I freeze half the pesto and eat the rest the next day.  Thank you to Ming for washing the blender and for often saving the second half of the pesto for me.

Lately I like to microplane a carrot.  Then I spread that on the plate before I put the tempeh down.  It makes a nice little bed for it.  Tastes like delicious brightness.

Freshly shredded carrot is just delightful, as a layer for anything.  In a salad or with some rice or anything.

Raw carrot is too crunchy for my mouth comfort, but it’s soft and lovely when I microplane it.  And I have faith that I can digest it that way.

what I eat lately

I make some amazing salads lately.  This one was spinach, a few cherry tomatoes cut up, avocado, cucumber slices, green olives cut up, freshly shredded carrot, and feta.  No dressing necessary!

smoothies

Lately I make some wonderful smoothies.  I think I’m in love with frozen blueberries.  The smoothies I make are more what my body is asking for than storebought smoothies, which are way too sweet for me.

This was today’s smoothie recipe.

  • 1/3 cup frozen blueberries
  • handful frozen cranberries
  • 1/2 banana
  • tbsp hemp seed
  • 2 tbsp tahini
  • oatmilk to cover

Wow, it was just what I wanted.  Thank you, mother nature!  The tahini gives a lovely creaminess.  Hemp seed is some nice fatty nutrition.  Half a banana is sweet enough.

Sometimes I put ground almonds, part of an apple, chia seeds, part of a pear…

Today my breakfast was rice and some tofu with garlic.  Simple, delicious, commonplace breakfast for me.

Then I had the tempeh with pesto and carrot.  I know that’s a lot of soy, but I don’t usually do two meals in a row like that.  Then I had the blueberry smoothie.

For dinner I might make soup.  Sometimes Ming makes fish and gives some to me.  I have salads, or quinoa with a pea protein sausage.  For about half a year I couldn’t eat eggs, but I had one on Passover and was fine, so I’m trying that again.

I have a collection of health issues, and the foods I eat affect the way I feel a lot.  Please don’t judge me harshly for what I eat lately.  I’m doing my best with the body I have.
