Oh hey, I made this special nutty sauce. It’s freakin delicious and vegan. Maybe if you like these ingredients, you would like it.
Here it is on some quinoa with spinach, garlic, and bell pepper. There was a veg patty on the bottom that can’t be seen. What a lovely meal.
I had it also on this rice and spinach. Tasty!
My good friend up in Canada shared the recipe with me. She was at a party and tasted the delicious dip, then asked for the recipe. It’s from Whitewater Cooks at Home.
I will tell you how I actually made it. I made it in the blender, so it was thick and really well mixed.
- garlic clove
- tsp fresh ginger finely ground
- tbsp miso
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- tbsp sesame oil
- half cup olive oil
- 1/4 cup tahini
- 1/4 cup almond butter
- 2 tbsp almonds
- tsp sesame seeds
I blended all that, and I didn’t measure anything. It was so yummy! The recipe calls for dijon mustard also, but I felt trepidatious about the mustard, so I left it out. Good choice–it was plenty delicious and flavory. I want to make it again!
It could have used more ginger and more liquid. Maybe I was too conservative with the olive oil.
My friend uses it more as a dip for veggies, while I use it more as a topping to make foods I usually eat more exciting and nutritious.
sweet potato ginger soup
I also made this sweet potato soup with fresh ginger and coconut milk. It was delicious and also vegan. This is the recipe I based it on.
I added to it lemongrass, turmeric, and I didn’t use veg broth–I used extra garlic and miso. Also I added a carrot with the sweet potatoes.
It was grrreat! We shared with the people in the other houses. They liked it too. I put hot Ethiopian spices as I dished the last two servings, for the people who like hot.
Here was the final bit of soup, spattered with the last of the coconut milk. Doesn’t look that yummy, but trust me!
conclusion
These foods are very delicious. Both special nutty sauce and the sweet potato soup are vegan, full of flavor, nourishing, fun, rather easy, and feature fresh ginger, which feels so warming and nurturing. Bonusly, I keep all the ingredients on hand.
