Erik said it was the best pea soup he’d ever eaten. It took more like two hours for the peas to cook–the recipe said one hour. Even then the peas weren’t really tender. But close enough. It’s a very good simple recipe, but it made only two full bowls. I will double it next time.
I’m making whole pea soup with tarragon for dinner but with parsley instead of tarragon because that’s what I have–no idea if it will work. I bought the whole dried peas to sprout a few months ago when I was crazy about trying to sprout new things, and now I need to use them up.
