pumpkin pancakes #42

2 cups whole wheat flour
3/4 cup brown sugar
4 tsp baking powder
3 tsp cinnamon
regular can canned pumpkin
1 1/4 cup milk or soymilk
1/4 cup vegetable oil or melted butter
3 eggs
1 tsp vanilla

Stir all ingredients together. If the batter is too thick, add more milk to thin it. Cook as pancakes.

These are delicious without syrup since there’s sugar in the batter.
